Sweet and Salty Coca-Cola Soy Glazed Chicken Drumsticks

A pot of drumsticks slowly braised in a sweet/salty/funky sauce made of Coca-cola (a dad favorite for marinade), soy sauce, black vinegar, and hit of fish sauce. The resulting pot of drumsticks becomes so tender and sticky sweet full of concentrated sauce that it begs to be eaten with a fresh bowl of white rice.

Chicken
2.5 pounds of chicken drumsticks
Dry rub
2 tbsp light brown sugar
2 tbsp granulated sugar
1 tbsp plus 1 teaspoon kosher salt
1 tsp onion powder
1 tsp freshly ground black pepper
1 tbsp grated garlic (6 cloves)
1 tsp ground ginger

2 tbsp soy sauce
2 tsp honey
1 1/2 tbsp black vinegar or rice vinegar
2 tsp fish sauce
1 cup Coca-cola
Preparation
Prep dry rub and chicken
In a large mixing bowl, combine the dry rub ingredients and stir to mix well.
Add the drumsticks to the bowl of dry rub and generously massage each piece of meat with the dry rub. Cover the bowl and transfer to the fridge to marinate for 30 minutes.
Braise chicken
Preheat an oven to 275°F. In a large oven safe pot or dutch oven, add soy sauce, honey, black vinegar, fish sauce, and Coca-cola and mix. Place the drumsticks into the pot and toss in the marinade, then place the pot into the oven. Roast for 2 ½ hours (or 1 hour for every pound of meat you're braising) until the chicken is tender and fall of the bone. Once finished cooking, pour into a serving bowl and top with scallions, and enjoy with a side of white rice.
