I love this little dumpling so much. It has been with me since I was a kid. It's meaty, juicy, ginger-y and oh so plump. Steam them, fry them, they all go great in the tum.

Wrapper

2 cups of all-purpose flour or "00" flour
3/4 cups warm water
Sprinkle of salt

Filling

1 lb ground pork shoulder or ground pork

1/2 head of Napa cabbage, finely chopped

1 tbsp kosher salt

2 tsp sesame oil

3 cloves of garlic, grated

1 tsp fresh ginger, grated

4 whole scallions finely chopped

1 1/2 tsp light brown sugar

1-2 tbsp of chicken broth
